It was a few months back that I heard about someone blaming avocado toast as the reason why millennials are unable to become homeowners in this day and age. Sadly enough, this dramatic piece of advice deterred me from trying avocado toast, even though I was already a homeowning millennial. Not trying to lose our house over some toast and smashed avocado, you guys!

Well, turns out, that was a mistake on my part. However, I learned two great things: 1. avocado toast is actually amazing and 2. I didn’t have to take out a second mortgage on our house to afford it! Once again, I turned to Siggi’s Icelandic Skyr for some help to tackle this recipe. If you haven’t heard about them, I wrote a post about them here originally for my “that’s what up” series and have included them in some other recipes on this blog. Basically, I’m obsessed with them because it’s Icelandic (which if you don’t know, I have an unnatural obsession with anything related to Iceland) but also because Siggi’s yogurt is what I think yogurt is actually supposed to be like – simple ingredients, not a lot of sugar, more protein than sugar in each cup.

On to the recipe!

Avocado Toast – makes one serving

Ingredients:

  • 2 slices whole grain bread
  • 1/2 Avocado
  • 3 Tbsp Siggi’s yogurt (coconut recommended, I used vanilla)
  • 1 tsp red chili flakes
  • salt & pepper to taste

Instructions:

In a small bowl, mash the avocado with yogurt. Season with salt, pepper, and chili flakes. Spread mixture on the two pieces of toast and enjoy!

 

I know, it’s a pretty simple recipe but when you’re lazy like me sometimes you need simple recipes to help you make healthy choices!
