kale, potato, and chicken soup

I finally created a recipe ALL BY MYSELF!

You guys, this is a big deal for me. I’m not one of those people who’s naturally talented when it comes to creating magical dishes in the kitchen by just knowing. The only time I had interest in being involved in kitchen projects growing up was when it was baked goods, jello, or pudding and honestly, that’s kind of it. Cooking was never really a thing that interested me. I’m a nerdy kid who always wanted to play by myself somewhere or read a book for hours on end until food magically appeared for me to eat and then I would run off to do more things I wanted to do.

Needless to say, becoming a “grown-up” (whatever that means) where I had to make my own food consistently has proven to be a challenge that I am just now rising to meet. I have no shame in admitting that. I was blessed by the gods with an insanely fast metabolism and, unfortunately, never really had to be concerned with diet or what I put into my body until recently. So, I am really proud of the strides I have made as far as my cooking skills and even just my overall desire to improve my cooking and dietary needs.

On to my super simple recipe that probably didn’t need as long of an intro as I gave it!

*Note: Since this is my first original recipe, the measurements reflect how I measure things. Which is in handfuls and eyeballing most things. Don’t judge me.

Kale, Potato, Chicken Soup

Ingredients:

  • 2 handfuls of little creamer potatoes (I used these here.); chopped into quarters
  • 2 cans of cream of chicken soup
  • 2 cans of water
  • 4 chicken breast (probably about one pound worth)
  • 5 handfuls of kale (or as much as you like)

Instructions:

  1. Pour cream of chicken and cans of water into a pot and bring to a boil.
  2. While soup is cooking, chop potatoes and add to soup mixture, drop heat to a simmer.
  3. While potatoes are cooking, throw the chicken breast in a separate pan and begin to cook, covered, on medium-high heat until slightly browned on both sides. Chop chicken into bite-size pieces an add to soup.
  4. Once potatoes seem nearly cooked enough (approx 8-10 minutes) throw kale into soup, cover and cook for 2-3 minutes until kale is softened.
  5. Enjoy delicious soup!

Try my magical first official “recipe” and let me know what you think! It’s not a 3-course dinner, but I’m proud of my accomplishment of making a meal that didn’t explode or make my family puke in my first “off-road” cooking experience.

    Yum this sounds delicious! Have you thought about yellow curry with steamed kale and brown rice?! I think you should put it next on the list! Oh man, I’m hungry now after looking at this… lol
